Nutraceutical and multi-element profiles of elephant garlic (Allium ampeloprasum L.) and common garlic (Allium sativus L.) from Slovenia

Bulbous Allium spp. such as “big-headed” elephant garlic (Allium ampeloprasum L.) and common sativus contain a wide range of bioactive compounds with health-promoting properties are most commonly used food seasonings. The objective the present study is to verify if there difference in selected nutraceuticals (dry matter, TPC, allicin) elemental profiles (macro- micro-elements) two species produced growing seasons Jablje, Slovenia (a sub-Alpine region). total phenolic content (TPC) was determined spectrophotometrically, organosulfur compound allicin by HPLC analysis multi-element an inductively coupled plasma-mass spectrometry (ICP-MS). results show that bulbs had slightly lower TPC about six times less allicin, major compound. macro- (Mg, P, S, K, Ca) micro-elements (Cr, Mn, Fe, Co, Cu, Zn, Mo) varied considerably among samples studied. greatest differences between were observed for Ca, Fe. Our confirm different nutritional characteristics cloves species.
